We use the wild herbs we find and organic vegetables from the region to create a delicious wild meal on the fire <\/p>\n<p>End of seminar May 31, 2026, 2:00 p.m.<\/p>\n<p>Smoking is an ancient way of preserving food. A home-smoked fish straight from the oven is so delicious. Over the years, Annette and Wolfgang have developed a real passion for smoking fish. Firstly because it&#8217;s great fun and secondly because it tastes fantastic! <\/p>\n<p>We try different fish, preferably those straight from our North Sea. We stuff fish with herbs or our favorite, mackerel with pepper in the belly. <\/p>\n<p>&#8211; We show you how you can build your own stove.  <\/p>\n<p>&#8211; We learn about natural pickling in salt.  <\/p>\n<p>&#8211; Hot and cold smoking<\/p>\n<p>&#8211; The use of (wild) herbs<\/p>\n<p>&#8211; Which woods are used for smoking?<\/p>\n<p>We start gutting and washing the fish on Friday. They marinate overnight in sea salt and herbs. We collect herbs for the fish, as well as for our dinner with salad and other wild delicacies. We cook and eat together around the campfire.   <\/p>\n<p>Saturday: After a nice breakfast in the castle, we meet in the garden and go on a wild herb tour through the forest and garden. We cook and sizzle, light the smoker and smoke the fish for several hours. At lunchtime we have a small meal together and in the early evening the delicious fish is warm from the oven. What a treat. Served with a &#8220;new potato&#8221; simply with butter and of course a wild herb salad. We dine around the crackling campfire and round off the evening together. We smoke cold overnight.      <\/p>\n<p>We meet up on Sunday after breakfast and are very excited to see how our salmon has turned out overnight. We fry it again together and then of course eat the delicious salmon to round off the weekend at Berum Castle. <\/p>\n<p>The accommodation<\/p>\n<p>The historic Berum Castle is located in the climatic health resort of Hage in East Frisia. The nearest town of Norden and the North Sea are both approx. 8 km away. Although the surrounding area is typically East Frisian &#8220;flat&#8221;, there is a small wooded area directly in front of the castle gate where you can take wonderful walks.<\/p>\n<p>You will spend the night in one of our cozy double rooms, which we have furnished with great attention to detail. The rooms can be booked for single or double occupancy. Some rooms also have two single beds.  <\/p>\n<p>Our guests are of course invited to sit down at one of the various seats in the house or in the garden and explore the extensive castle park.<\/p>\n<p>The booking<\/p>\n<p>The fee of \u20ac 300.00 includes the seminar fees and full board (breakfast, lunch and dinner).
